“Daifuku” are Japanese treats made of mochi and red bean paste. The kanji means “great fortune.” This recipe will show you how to make daifuku with strawberries, which gives the daifuku a tart and sweet flavor. It may be easier to make than you think!

Ingredients pictured above!
150 mL water
Koshian (fine anko)
6 strawberries
¾ cup shiratamako (白玉粉)
2 tbsp sugar
Cornstarch
Microwavable bowl
Spatula
Measuring cup
Plastic wrap

Step 1: Wash, dry, and take the leaves off of the strawberries.
Step 2: Cover the strawberries in the koshian. I like to use some plastic wrap to shape them.

Step 3: Mix ¾ cup shiratamako with 2 tablespoons of sugar.

Step 4: Mix the 150 mL of water with the shiratamako and sugar. Cover loosely with plastic wrap and microwave for 1 minute.

Step 5: After taking the bowl out of the microwave, mix the contents using a wet spatula.
Step 6: Cover the bowl with the plastic wrap again and microwave for 1 minute.

Step 7: After taking the mixture out of the microwave, it should start to resemble mochi. Mix it again with a wet spatula, cover again, and microwave for 30 seconds.

Step 8: The mixture should now be sticky and look like the mochi we all know and love. Sprinkle some cornstarch on a surface, scoop the contents of the bowl out with the spatula, and place it on the cornstarch.

Step 9: Roll around the mochi and cover the sticky parts with cornstarch. Divide it into 6 parts (one for each strawberry).

Step 10: Roll and flatten the mochi dough so that it’s big enough to wrap around the strawberries and red bean paste. I have not yet found a good way to wrap the strawberries; usually I just struggle and pinch the mochi until it looks presentable! Please let me know if you find another technique that works better.
